I don’t know what it is, but for me, October and banana bread go hand in had. There’s just something about those cool mornings and warm banana bread that reminds me of my childhood. And the lingering smell of banana bread throughout the house is heaven. This is my mom’s recipe, I’ve had it for years. I can’t bring myself to try any new recipes because to me, this is the best one. And why try and fix a good thing right?
So I’m sharing it with you on this cool October day. I hope you enjoy it as much as I do.
Banana Bread Recipe
1 cup sugar
1/2 cup butter
3 mashed bananas
2 cups flour
1/2 tsp. salt
1 tsp. baking soda (dissolved in 1/2 cup hot water)
*1/2 cup nuts (optional)
Preheat over to 375 degrees.
Cream sugar and butter. Add banana and eggs. Add dry ingredients and soda water. Add hot water if batter is stiff. Add in nuts.
Bake 1/2 hour for muffins and 40-45 minutes for loaves.
